Tuesdays are for easy comfort food, and what’s more autumn than sweet potatoes, maple syrup, and a little crunch from toasted pecans? This dish is simple, cosy, and full of autumn flavour – perfect for a midweek pick-me-up.
You’ll need:
- 3-4 medium sweet potatoes, peeled and cubed
 - 2-3 tbsp maple syrup (or more if you like it sweet!)
 - 1 tsp cinnamon
 - 1/2 tsp nutmeg
 - 2 tbsp butter or coconut oil
 - 1/2 cup chopped pecans
 - Pinch of salt
 
How to:
- Preheat your oven to 400F (200C).
 - Toss sweet potatoes with butter, maple syrup, cinnamon, nutmeg, and a pinch of salt.
 - Spread evenly on a baking sheet and roast for 25-30 minutes, tossing halfway through.
 - Sprinkle chopped pecans on top for the last 5 minutes of baking for a toasty crunch.
 - Serve warm as a side dish – or sneak a few bites straight from the tray (we won’t tell).
 
This dish is simple, autumn-perfect, and just sweet enough to feel like a treat. Bonus points if you pair it with a cosy mug of apple cider.
